  • 3 oz Strawberry-flavored gelatin powder
  • 1 cup Boiling water
  • 1 cup Cold water
  • 8 oz Canned crushed pineapple (with juice)
  • 1 cup Cottage cheese
  • 1 cup Whipped topping (thawed)
  • 6 whole Maraschino cherries (optional, for garnish)

Directions

Step 1

In a medium mixing bowl, dissolve the strawberry-flavored gelatin powder in the boiling water. Stir until completely dissolved, about 2 minutes.

Add the cold water to the gelatin mixture and stir well.

Stir in the crushed pineapple along with its juice. Mix well to distribute the fruit evenly.

Add the cottage cheese to the mixture and stir until fully incorporated.

Fold in the whipped topping gently until the mixture is smooth and evenly pink in color.

Pour the mixture into a 6-cup gelatin mold or a similarly sized serving dish. Smooth out the surface with a spatula.
