Ingredients

  • 115 grams unsalted butter
  • 150 grams granulated sugar
  • 50 grams light brown sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon strawberry extract
  • 200 grams all-purpose flour
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon baking soda
  • 0.25 teaspoon salt
  • 0.25 teaspoon pink gel food coloring
  • 120 grams white chocolate chips

Directions

Step 1

Preheat your oven to 175°C (350°F) and line two baking sheets with parchment paper.

Step 2

In a large mixing bowl, cream together the butter, granulated sugar, and light brown sugar using a hand mixer or stand mixer until light and fluffy, about 2-3 minutes.

Step 3

Add the egg, vanilla extract, and strawberry extract to the butter-sugar mixture, and beat until well combined.

Step 4

In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Avoid overmixing to keep the cookies tender.

Step 6

Add the pink gel food coloring to the dough and mix until you achieve a consistent pink hue.

Step 7

Fold in the white chocolate chips using a spatula until evenly distributed throughout the dough.

Step 8

Scoop tablespoon-sized portions of the dough and roll them into balls. Place them on the prepared baking sheets, leaving about 2 inches of space between each cookie to allow for spreading.

Step 9

Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are set but the centers remain slightly soft.

Step 10

Remove the cookies from the oven and let them cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
