Ingredients

  • 4 large Pink grapefruits
  • 200 grams Sugar
  • 250 ml Water
  • 2 tablespoons Light corn syrup (optional)
  • 2 tablespoons Lemon juice
  • 1 teaspoon Pink grapefruit zest

Directions

Step 1

Wash the grapefruits thoroughly and zest one of them to yield about 1 teaspoon of pink grapefruit zest. Set the zest aside.

Step 2

Cut the grapefruits in half and juice them using a citrus juicer. Strain the juice through a fine mesh sieve into a bowl to remove any pulp and seeds. You should have approximately 475 ml (2 cups) of juice.

Step 3

In a small saucepan, combine the sugar, water, and light corn syrup (if using). Place over medium heat and stir until the sugar dissolves completely. This should take about 3–5 minutes. Remove from heat and let the syrup cool slightly.

Step 4

In a mixing bowl, combine the grapefruit juice, the prepared sugar syrup, the reserved grapefruit zest, and the lemon juice. Mix well.

Cover the bowl and refrigerate the mixture for at least 2–3 hours, or until thoroughly chilled.
