Ingredients

  • 250 grams strawberries
  • 150 grams raspberries
  • 200 grams rhubarb
  • 1 large pink apple
  • 100 grams granulated sugar
  • 1 tablespoon lemon juice
  • 60 milliliters water
  • 1 teaspoon vanilla extract

Directions

Step 1

Rinse the strawberries, raspberries, and rhubarb thoroughly. Hull the strawberries and chop them into quarters.

Step 2

Trim the rhubarb ends and chop it into 1-inch pieces.

Step 3

Peel, core, and dice the pink apple into small chunks.

Step 4

In a medium-sized saucepan, combine the strawberries, raspberries, rhubarb, apple, granulated sugar, lemon juice, and water.

Step 5

Place the saucepan over medium heat and bring the mixture to a gentle simmer, stirring occasionally.

Step 6

Once simmering, reduce the heat to low and let the mixture cook for 15-20 minutes, stirring every 3-4 minutes, until the fruit breaks down and the mixture thickens slightly.

Step 7

Remove the pan from the heat and stir in the vanilla extract.

Step 8

Allow the compote to cool for 5-10 minutes before serving, or let it cool completely and store in an airtight container in the refrigerator for up to one week.
