Ingredients

  • 1.5 cups All-purpose flour
  • 1 cup Granulated sugar
  • 1.5 teaspoons Baking powder
  • 0.25 teaspoons Salt
  • 0.5 cup Unsalted butter (softened)
  • 4 large Egg whites
  • 2 teaspoons Vanilla extract
  • 0.75 cup Pink champagne (sparkling wine)
  • 2 drops Red food coloring (optional)
  • 2.5 cups Powdered sugar
  • 0.5 cup Unsalted butter (softened, for frosting)
  • 2 tablespoons Pink champagne (for frosting)
  • 1 teaspoon Vanilla extract (for frosting)

Directions

Step 1

Preheat your oven to 350°F (175°C). Line a 12-cup cupcake pan with cupcake liners.

Step 2

In a medium mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt.

Step 3

In a large mixing bowl, beat the softened unsalted butter with an electric mixer until creamy. Gradually add the dry ingredients and mix on low speed until the mixture resembles coarse crumbs.

Step 4

In a separate bowl, whisk the egg whites until frothy. Add them to the batter along with the vanilla extract and pink champagne. Mix on medium speed until the batter is smooth and well combined.

Step 5

If using, add 2 drops of red food coloring to give the batter a pale pink hue. Stir until the color is evenly distributed.

Step 6

Divide the batter evenly among the cupcake liners, filling each about two-thirds full.

Step 7

Bake in the preheated oven for 16-18 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.

Step 8

Remove the cupcakes from the oven and allow them to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.

Step 9

While the cupcakes are cooling, prepare the frosting. In a large mixing bowl, beat the softened butter with an electric mixer until light and fluffy.

Step 10

Gradually add the powdered sugar, one cup at a time, mixing well after each addition. Add the pink champagne and vanilla extract, and beat until the frosting is smooth and spreadable.

Step 11

Once the cupcakes are completely cooled, frost them generously using a piping bag or an offset spatula.

Step 12

Optional: Garnish with sprinkles, edible glitter, or a small piece of fruit for added decoration.

Step 13

Serve and enjoy your delightful Pink Champagne Cupcakes!
