Ingredients

  • 2 cups fresh pineapple chunks
  • 0.5 cup dry white wine
  • 0.25 cup granulated sugar
  • 1 cup cold heavy whipping cream
  • 1 teaspoon unflavored gelatin
  • 2 tablespoons cold water
  • 0.5 cup pineapple juice
  • 4 leaves mint leaves (optional for garnish)

Directions

Step 1

In a small bowl, sprinkle the unflavored gelatin over 2 tablespoons of cold water. Let it sit for 5 minutes to bloom.

Step 2

In a saucepan over medium heat, combine the pineapple juice and granulated sugar. Warm the mixture until the sugar dissolves completely, about 2-3 minutes. Do not let it boil.

Step 3

Remove the saucepan from heat and stir in the bloomed gelatin until it dissolves completely. Let this mixture cool to room temperature.

In a blender, add the fresh pineapple chunks and the dry white wine. Blend until smooth. Strain the mixture through a fine mesh sieve to remove any pulp, if desired.
