Ingredients

  • 1 medium (about 3-4 pounds) Pineapple
  • 8 cups Water
  • 1 medium Lime
  • 2 tablespoons Honey (optional)
  • 2 cups Ice cubes
  • 5 leaves Fresh mint leaves (optional for garnish)

Directions

Step 1

Prepare the pineapple by cutting off the top and bottom. Stand it upright and slice off the skin, removing as many of the 'eyes' as possible. Then cut the pineapple into chunks, discarding the core.

Step 2

Add the pineapple chunks to a blender along with 4 cups of water. If desired, add honey for extra sweetness.

Step 3

Blend on high speed until the pineapple is fully pureed and the mixture appears smooth.

Step 4

Strain the blended pineapple mixture through a fine-mesh sieve or cheesecloth into a large pitcher to remove any pulp. Use the back of a spoon to press the pulp and extract as much liquid as possible.

Step 5

Juice the lime and add it to the pitcher along with the remaining 4 cups of water. Stir well to combine.

Step 6

Add the ice cubes to the pitcher and stir to chill the pineapple water.

Step 7

Serve immediately in glasses, garnished with fresh mint leaves if desired.
