Preheat your oven to 350°F (175°C).
In a 10-inch cast-iron skillet, melt 6 tablespoons of unsalted butter over medium heat.
Stir in 3/4 cup of brown sugar until melted and combined, creating a caramel sauce. Remove from heat.
Arrange 7 pineapple rings in the caramel sauce at the bottom of the skillet. Place a maraschino cherry in the center of each pineapple ring. Set aside.
In a medium mixing bowl, whisk together 1 1/2 cups of all-purpose flour, 1 cup of granulated sugar, 1 1/2 teaspoons of baking powder, and 1/4 teaspoon of salt.
