Ingredients

  • 3 tablespoons Unsalted butter
  • 3 tablespoons Brown sugar
  • 2 Pineapple rings (canned or fresh)
  • 2 Maraschino cherries
  • 6 tablespoons All-purpose flour
  • 0.5 teaspoons Baking powder
  • 0.125 teaspoons Salt
  • 3 tablespoons Granulated sugar
  • 1 large Egg
  • 2 tablespoons Milk
  • 0.5 teaspoons Vanilla extract

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

In a small (6-inch) ovenproof skillet or baking dish, melt 2 tablespoons of butter over low heat.

Step 3

Once melted, stir in the brown sugar and mix until fully dissolved, spreading it evenly across the bottom of the dish.

Step 4

Place the pineapple rings on top of the brown sugar mixture, and position a maraschino cherry in the center of each ring. Set aside.

Step 5

In a small mixing bowl, whisk together the flour, baking powder, and salt. Set aside.

Step 6

In another bowl, cream together the remaining 1 tablespoon of butter and granulated sugar until light and fluffy.

Step 7

Beat in the egg until well combined, then stir in the milk and vanilla extract.

Step 8

Gradually add the dry ingredients to the wet ingredients, mixing gently until a smooth batter forms. Be careful not to overmix.

Step 9

Spoon the batter over the pineapple rings, spreading it evenly to cover the fruit and caramel mixture.

Step 10

Place the skillet or baking dish in the preheated oven and bake for 20-25 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.

Step 11

Remove from the oven and let the cake cool for 5 minutes in the dish.

Step 12

Carefully run a knife around the edges and invert the cake onto a serving plate. Serve warm or at room temperature.
