Ingredients

  • 8 oz lo mein or rice noodles
  • 1 cup fresh pineapple chunks
  • 0.3333 cup soy sauce
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tsp ginger, grated
  • 2 cloves garlic, minced
  • 2 tbsp sesame oil
  • 1 tbsp cornstarch
  • 2 tbsp water
  • 1 medium carrot, julienned
  • 1 medium red bell pepper, sliced
  • 2 stalks green onions, chopped
  • 0.5 cup edamame, shelled and cooked
  • 1 tbsp sesame seeds (optional)

Directions

Step 1

Cook the noodles according to the package instructions. Once done, drain and set aside.

Step 2

In a small mixing bowl, combine soy sauce, honey, rice vinegar, grated ginger, minced garlic, cornstarch, and water. Whisk until the cornstarch is fully dissolved and the sauce is smooth.

Step 3

Heat 1 tablespoon of sesame oil in a large skillet or wok over medium-high heat.

Step 4

Add the julienned carrot, red bell pepper, and pineapple chunks to the skillet. Stir-fry for 3-4 minutes, or until the vegetables start to soften and the pineapple begins to caramelize slightly.

Push the vegetables to one side of the skillet and add the remaining 1 tablespoon of sesame oil to the empty space. Pour in the prepared sauce into the skillet and cook for about 1-2 minutes, stirring constantly, until the sauce thickens.
