  • 4 large sweet potatoes
  • 1 can (20 oz) pineapple chunks (canned, with juice)
  • 4 tablespoons unsalted butter
  • 0.5 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.25 teaspoon salt
  • 0.5 cup pecans (optional, chopped)
  • 1 cup mini marshmallows (optional)

Directions

Step 1

Preheat the oven to 375°F (190°C). Grease a 9x13-inch baking dish lightly with butter or cooking spray.

Peel the sweet potatoes and cut them into 1/2-inch thick slices.

Step 3

Place the sweet potato slices in a large pot, cover them with water, and add a pinch of salt. Bring to a boil over medium-high heat and cook for 8-10 minutes, or until just fork-tender. Drain and set aside.
