Ingredients

  • 300 g Seitan
  • 200 g Pineapple chunks (fresh or canned)
  • 1 medium Red bell pepper
  • 1 medium Green bell pepper
  • 1 small Yellow onion
  • 2 cloves Garlic cloves
  • 2 tbsp Vegetable oil
  • 3 tbsp Soy sauce
  • 2 tbsp Rice vinegar
  • 3 tbsp Ketchup
  • 2 tbsp Brown sugar
  • 120 ml Pineapple juice (reserved if using canned pineapple)
  • 1 tbsp Cornstarch
  • 2 tbsp Water
  • 4 servings Cooked rice (optional, for serving)

Directions

Step 1

Cut the seitan into bite-sized pieces and set aside.

Step 2

Dice the red bell pepper, green bell pepper, and yellow onion into similar-sized pieces. Mince the garlic cloves.

Step 3

In a small bowl, whisk together the soy sauce, rice vinegar, ketchup, brown sugar, and pineapple juice to create the sauce.

Step 4

In another small bowl, mix the cornstarch and water to form a slurry. Set aside for later use.

Step 5

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the seitan and stir-fry for 3-4 minutes until golden on the edges. Remove the seitan from the pan and set aside.
