  • 4 pieces Bone-in pork chops
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Paprika
  • 1 can (20 ounces) Canned pineapple chunks (in juice)
  • 3 tablespoons Brown sugar
  • 2 tablespoons Soy sauce
  • 2 tablespoons Rice vinegar
  • 2 pieces Garlic cloves (minced)
  • 1 teaspoon Grated fresh ginger
  • 1 tablespoon Cornstarch
  • 2 tablespoons Water
  • 2 tablespoons Olive oil
  • 2 tablespoons Fresh cilantro (chopped, for garnish)

Directions

Step 1

Season the pork chops evenly on both sides with salt, black pepper, and paprika. Set aside.

Step 2

Drain the canned pineapple, reserving the juice in a bowl. Set aside the pineapple chunks.

Step 3

In a small saucepan over medium heat, combine the reserved pineapple juice, brown sugar, soy sauce, rice vinegar, minced garlic, and grated ginger. Stir and bring the mixture to a simmer.

In a small bowl, mix the cornstarch with the water to create a slurry. Slowly whisk this into the simmering sauce to thicken it. Allow the sauce to cook for another 2-3 minutes, then remove from heat.
