Ingredients

  • 3.5 cups All-purpose flour
  • 0.25 cup Granulated sugar
  • 1 teaspoon Salt
  • 2.25 teaspoons Instant yeast
  • 1 cup Whole milk
  • 5 tablespoons Unsalted butter
  • 2 Eggs
  • 1 cup Crushed pineapple (canned, drained)
  • 0.75 cup Brown sugar
  • 0.25 cup Granulated sugar for filling
  • 1.5 teaspoons Ground cinnamon
  • 2 teaspoons Vanilla extract
  • 0.5 cup Chopped pecans (optional)
  • 0.25 cup Heavy cream

Directions

Step 1

In a large mixing bowl, combine 3 cups of all-purpose flour, granulated sugar, salt, and instant yeast.

Step 2

In a small saucepan, heat milk and 4 tablespoons of butter until warm but not hot, about 110°F. Stir to melt the butter, then pour into the dry ingredients.

Step 3

Add the eggs and mix until a soft dough forms. Gradually add the remaining 1/2 cup of flour, kneading until the dough is smooth and elastic (about 7-10 minutes by hand or 5 minutes with a stand mixer).

Step 4

Place the dough in a greased bowl, cover with a damp towel, and let it rise in a warm place until doubled in size (about 1 hour).

Step 5

To make the pineapple glaze, mix crushed pineapple, brown sugar, 1 tablespoon of butter, vanilla extract, and heavy cream in a small saucepan. Cook over medium heat for 5-7 minutes, stirring frequently until thickened. Set aside to cool.

Step 6

Once the dough has risen, roll it out on a lightly floured surface into a 12x16-inch rectangle.

Step 7

Brush 1 tablespoon of melted butter over the dough. Sprinkle with granulated sugar, ground cinnamon, and a handful of chopped pecans (if using).

Step 8

Starting at a long edge, roll the dough tightly into a log. Slice into 12 equal pieces.

Step 9

Grease a 9x13-inch baking dish and spread half of the prepared pineapple glaze on the bottom of the dish.

Step 10

Arrange the sliced buns on top of the glaze. Let them rise again, covered, for 30-40 minutes until puffy.

Step 11

Preheat your oven to 350°F (175°C). Bake the sticky buns for 25-30 minutes, or until golden brown on top.

Step 12

Remove from the oven and let cool for 5 minutes. Carefully invert the buns onto a serving platter so the pineapple glaze is on top.

Step 13

Warm the remaining pineapple glaze and spoon over the buns as desired before serving.
