Ingredients

  • 1 lb Raw shrimp, peeled and deveined
  • 1 cup Fresh pineapple, diced
  • 2 tbsp Soy sauce
  • 1 tbsp Honey
  • 1 tbsp Rice vinegar
  • 2 cloves Garlic, minced
  • 1 tsp Ginger, grated
  • 2 tbsp Olive oil
  • 1 cup White rice
  • 2 cups Water
  • 4 stalks Scallions, thinly sliced
  • 1 tsp Sesame oil
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 0.25 tsp Red chili flakes (optional)
  • 2 tbsp Cilantro, chopped (for garnish)

Directions

Step 1

Rinse the white rice thoroughly under cold water until the water runs clear. Set aside.

Step 2

In a medium saucepan, bring 2 cups of water to a boil. Add the rice and 1/2 teaspoon of salt. Reduce the heat to low, cover, and simmer for 15 minutes or until the rice is tender and water is fully absorbed.

Step 3

While the rice cooks, prepare the shrimp. In a small bowl, whisk together soy sauce, honey, rice vinegar, garlic, ginger, and black pepper. If you prefer a bit of spice, add the red chili flakes.

Step 4

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the shrimp and cook for 2-3 minutes per side until pink and opaque. Remove the shrimp from the skillet and set aside.
