Peel and core the fresh pineapple. Chop it into small chunks and add them to a blender or food processor. Blend until you achieve a smooth puree.
In a small saucepan over medium heat, combine the pineapple puree and half the sugar (75 grams). Cook for 8-10 minutes, stirring often, until the mixture thickens slightly. Remove from heat and allow it to cool to room temperature.
In a heatproof bowl, whisk together the egg yolks and the remaining 75 grams of sugar. Place the bowl over a pot of simmering water, ensuring the bowl does not touch the water. Whisk continuously for about 6-8 minutes until the mixture becomes pale and thick. Remove from heat and let it cool completely.
In a separate bowl, whip the heavy cream and vanilla extract until soft peaks form.
Gently fold the cooled pineapple mixture into the whipped cream. Then, gradually fold in the egg yolk mixture until everything is well combined and airy.
Line a loaf pan with plastic wrap, leaving enough overhang to cover the top of the semifreddo. Pour the mixture into the pan, smoothing the top with a spatula. Cover with the overhanging plastic wrap.
