Ingredients

  • 1 cup Jasmine rice
  • 2 cups Water
  • 1 cup Coconut milk
  • 1 cup Heavy cream
  • 1 cup Crushed pineapple (canned or fresh)
  • 0.33 cup Granulated sugar
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Salt
  • 0.5 cup Pineapple chunks (for garnish, optional)
  • 4 leaves Mint leaves (optional garnish)

Directions

Step 1

Rinse the jasmine rice under cold water until the water runs clear to remove excess starch.

Step 2

In a medium saucepan, combine the rinsed rice and water. Bring to a boil over medium heat, then reduce to low, cover, and simmer for 15 minutes or until the rice is fully cooked and the water is absorbed.

Step 3

While the rice is cooking, in another saucepan, combine the coconut milk, heavy cream, granulated sugar, vanilla extract, and salt. Heat over low-medium heat, stirring occasionally, until the mixture is warm and the sugar is dissolved. Do not allow it to boil.

Step 4

Once the rice is cooked, remove it from heat. Gradually add the warm coconut milk mixture to the rice, stirring gently to combine. Simmer the mixture on low heat for 10 minutes to let the flavors meld and the pudding thicken.
