Ingredients

  • 1 cup All-purpose flour
  • 1 cup Granulated sugar
  • 1 teaspoon Baking soda
  • 0.25 teaspoon Salt
  • 20 ounces Crushed pineapple (with juice)
  • 1 teaspoon Vanilla extract
  • 1 large Egg
  • 0.5 cup Unsalted butter
  • 0.5 cup Brown sugar
  • 0.5 cup Heavy cream
  • 2 tablespoons Powdered sugar (optional, for garnish)

Directions

Step 1

Preheat your oven to 350°F (175°C). Lightly grease a 9x9-inch baking dish with butter or cooking spray.

Step 2

In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking soda, and salt.

Step 3

Add the crushed pineapple (including the juice), vanilla extract, and egg to the dry ingredients. Mix until well combined and smooth. The batter will be wet.

Step 4

Pour the batter evenly into the prepared baking dish and spread it out using a spatula.

Step 5

Bake in the preheated oven for 35–40 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.

Step 6

While the cake is baking, prepare the sauce. In a medium saucepan over medium heat, melt the unsalted butter.

Step 7

Stir in the brown sugar and heavy cream, and bring the mixture to a gentle boil. Let it simmer for 2–3 minutes, stirring occasionally, until slightly thickened. Remove from heat.

Step 8

Once the cake is done baking, remove it from the oven and set it on a wire rack to cool slightly.

Step 9

While the cake is still warm, use a skewer or fork to poke holes all over the top of the cake. Pour the warm caramel sauce evenly over the cake, allowing it to soak in.

Step 10

Let the cake cool completely before serving. Just before serving, dust with powdered sugar if desired.

Step 11

Serve the Pineapple Pudding Cake on its own or with a dollop of whipped cream. Enjoy!
