Ingredients

  • 1.5 kg Pork ribs
  • 2 teaspoons Salt
  • 1 teaspoons Black pepper
  • 1 teaspoons Garlic powder
  • 1 teaspoons Paprika
  • 1.5 cups Pineapple juice (unsweetened)
  • 0.25 cups Soy sauce
  • 3 tablespoons Brown sugar
  • 2 tablespoons Honey
  • 1 cup Fresh pineapple chunks
  • 1 tablespoons Cornstarch
  • 2 tablespoons Water
  • 2 tablespoons Vegetable oil

Directions

Step 1

Preheat your oven to 160°C (320°F).

Step 2

Prepare the ribs by removing the membrane from the back of the ribs if not already done. This ensures they cook evenly and are tender.

Step 3

Rub the ribs evenly with salt, black pepper, garlic powder, and paprika. Set aside for 10 minutes to allow the flavors to penetrate.

Step 4

Heat vegetable oil in a large oven-proof skillet or frying pan over medium-high heat. Sear the ribs on all sides until they are golden brown, about 2-3 minutes per side. Remove the ribs and set them aside.

Step 5

In the same skillet, reduce the heat to medium and add pineapple juice, soy sauce, brown sugar, and honey. Stir to combine and let the mixture simmer for 3-5 minutes until slightly reduced.

Return the seared ribs to the skillet and spoon some of the pineapple sauce over them. Cover the skillet tightly with aluminum foil or a lid.

Place the skillet in the preheated oven and bake for 1.5 hours, basting the ribs with the sauce every 30 minutes to keep them moist.

After 1.5 hours, remove the foil or lid and add the fresh pineapple chunks to the skillet. Increase the oven temperature to 200°C (400°F) and bake for an additional 15 minutes, uncovered, to caramelize the top of the ribs and thicken the sauce.

Step 9

In a small bowl, mix the cornstarch with water to create a slurry. Remove the skillet from the oven and place it back on the stovetop over medium heat. Stir in the cornstarch slurry to thicken the sauce further, if desired.

Step 10

Let the ribs rest for 5 minutes before slicing. Serve warm, drizzled with the pineapple sauce, and enjoy!
