Ingredients

  • 4 pieces bone-in pork chops
  • 6 pieces pineapple rings (canned or fresh)
  • 1 medium (sliced) yellow onion
  • 3 cloves garlic cloves
  • 3 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 2 tablespoons (chopped) fresh parsley

Directions

Step 1

Pat the pork chops dry with paper towels and season both sides with salt and ground black pepper.

Step 2

Heat the olive oil in a large skillet over medium-high heat. Once hot, add the pork chops and sear for 3-4 minutes on each side until golden brown. Remove the pork chops from the skillet and set aside.

Step 3

Reduce the heat to medium and add the sliced onions to the skillet. Sauté for 3-4 minutes, or until softened.

Step 4

Add the minced garlic to the skillet and cook for an additional 1 minute until fragrant.

Step 5

In a small bowl, whisk together the soy sauce, brown sugar, and apple cider vinegar. Pour this mixture into the skillet, stirring to deglaze and loosen any browned bits from the bottom of the pan.

Step 6

Return the pork chops to the skillet, nestling them into the sauce. Arrange the pineapple rings on top of and around the pork chops.

Step 7

Cover the skillet and simmer over medium-low heat for 10-12 minutes, or until the pork chops reach an internal temperature of 145°F (63°C).

Step 8

Remove the skillet from heat and garnish with chopped fresh parsley before serving.

Step 9

Serve the pineapple pork chops hot with the caramelized onions, pineapple rings, and extra sauce from the skillet spooned over the top. Suggested sides include steamed rice or sautéed vegetables.
