Ingredients

  • 2 cups Fresh pineapple, finely chopped
  • 1 cup Granulated sugar
  • 3 tablespoons Cornstarch
  • 3 tablespoons Water
  • 2 tablespoons Unsalted butter
  • 0.5 teaspoon Ground cinnamon
  • 0.25 teaspoon Ground nutmeg
  • 1 teaspoon Vanilla extract
  • 2.5 cups All-purpose flour
  • 1 cup Cold unsalted butter, cubed
  • 0.5 teaspoon Salt
  • 6 tablespoons Ice water
  • 1 Egg, beaten (for egg wash)

Directions

Step 1

In a medium-sized saucepan, combine the chopped pineapple and granulated sugar. Cook over medium heat, stirring occasionally, until the pineapple releases its juices and the sugar is dissolved, about 5-7 minutes.

Step 2

In a small bowl, mix the cornstarch and water to create a slurry. Add this mixture to the saucepan with the pineapple and stir well.

Step 3

Add the butter, cinnamon, nutmeg, and vanilla extract to the saucepan. Continue to cook and stir until the mixture thickens and becomes glossy, about 3-4 minutes. Remove from heat and allow the filling to cool completely to room temperature.

Step 4

To make the pie crust, whisk together the flour and salt in a large mixing bowl. Add the cold, cubed butter and use a pastry cutter or your fingers to blend the butter into the flour until the mixture resembles coarse crumbs.

Step 5

Gradually add the ice water, one tablespoon at a time, mixing just until the dough comes together. Do not overmix.

Step 6

Divide the dough into two equal portions, shape each into a disc, cover with plastic wrap, and refrigerate for at least 30 minutes.

Step 7

Preheat your oven to 375°F (190°C). On a lightly floured surface, roll out one disc of dough into a circle large enough to fit a 9-inch pie dish. Transfer the rolled dough to the pie dish and trim any excess dough hanging over the edges.

Step 8

Pour the cooled pineapple filling into the prepared pie crust, spreading it evenly.

Step 9

Roll out the second disc of dough and place it over the filling. You can choose to do a full crust, a lattice design, or cut decorative shapes from the dough. Seal the edges by pressing them with a fork or crimping with your fingers.

Step 10

Brush the top crust with the beaten egg to create a beautiful golden finish when baked.

Step 11

Cut a few small slits in the top crust to allow steam to escape. Place the pie on the middle rack of the oven and bake for 40-45 minutes, or until the crust is golden brown and the filling is bubbling.

Step 12

Remove the pie from the oven and cool on a wire rack for at least 2 hours before slicing. Serve warm or at room temperature. Enjoy your tropical Pineapple Pie from Barbados!
