Ingredients

  • 2 cups Fresh pineapple, diced
  • 0.5 cups Sugar
  • 0.5 cups Apple cider vinegar
  • 0.5 cups Yellow onion, finely chopped
  • 0.5 cups Red bell pepper, finely diced
  • 1 medium Jalapeño, seeded and minced
  • 1 teaspoons Mustard seeds
  • 0.5 teaspoons Ground turmeric
  • 0.5 teaspoons Ground ginger
  • 0.5 teaspoons Salt
  • 0.25 cups Water

Directions

Step 1

In a medium saucepan, combine the sugar, apple cider vinegar, mustard seeds, ground turmeric, ground ginger, and salt. Stir until the sugar dissolves, then add the water.

Step 2

Place the saucepan over medium heat and bring the mixture to a gentle boil.

Step 3

Add the diced pineapple, chopped onion, diced red bell pepper, and minced jalapeño to the saucepan. Stir to coat the ingredients evenly with the vinegar mixture.

Step 4

Reduce the heat to low and let the mixture simmer uncovered for about 15–20 minutes, stirring occasionally, until the pineapple softens and the liquid reduces to a syrupy consistency.

Step 5

Taste and adjust the seasoning if necessary. You can add a pinch more salt or a touch of sugar depending on your preference.

Step 6

Remove the saucepan from heat and let the relish cool to room temperature.

Step 7

Transfer the cooled pineapple pickle relish to a clean, airtight jar or container.

Step 8

Refrigerate for at least 2 hours before serving to allow the flavors to meld. The relish can be stored in the refrigerator for up to 2 weeks.
