Ingredients

  • 300 grams pasta (fusilli or rotini)
  • 200 grams pineapple chunks (fresh or canned, drained)
  • 1 medium red bell pepper, diced
  • 1 medium cucumber, diced
  • 1 small red onion, finely chopped
  • 150 grams sweet corn (canned or fresh, drained if canned)
  • 100 grams mayonnaise
  • 100 grams plain Greek yogurt
  • 2 tablespoons pineapple juice (reserved from canned pineapple or fresh-squeezed)
  • 1 tablespoon honey
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper, freshly ground
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Cook the pasta according to the package instructions until al dente. Drain, rinse under cold water, and set aside to cool completely.

Step 2

In a large mixing bowl, combine the cooled pasta, pineapple chunks, diced red bell pepper, cucumber, chopped red onion, and sweet corn.

Step 3

In a separate small bowl, whisk together the mayonnaise, Greek yogurt, pineapple juice, honey, apple cider vinegar, salt, and black pepper until smooth and well combined. Taste and adjust the seasoning if needed.

Step 4

Pour the dressing over the pasta and vegetable mixture. Gently toss to coat all the ingredients evenly.

Step 5

Cover the bowl with plastic wrap or transfer the salad to an airtight container. Chill in the refrigerator for at least 1 hour to allow the flavors to meld together.

Step 6

Before serving, give the salad another gentle toss and garnish with freshly chopped parsley if desired.

Step 7

Serve cold and enjoy this refreshing Pineapple Pasta Salad as a side dish or light main course.
