Ingredients

  • 2 cups (diced) Fresh pineapple
  • 0.5 cups (packed) Fresh mint leaves
  • 2 tablespoons Lime juice
  • 1 teaspoon (grated) Fresh ginger
  • 1 small (chopped) Green chili
  • 1 tablespoon Sugar
  • 1 teaspoon Cumin seeds
  • 0.5 teaspoon Salt
  • 1 teaspoon Olive oil
  • 2 tablespoons Water

Directions

Step 1

Heat a small pan over medium heat and add the cumin seeds. Dry-roast them for about 1 minute, until fragrant. Remove from the pan and let them cool slightly.

Step 2

In a food processor or blender, combine the diced pineapple, fresh mint leaves, lime juice, grated ginger, green chili, sugar, toasted cumin seeds, salt, olive oil, and water.

Step 3

Blend the mixture until smooth, scraping down the sides of the blender as needed. Adjust the consistency of the chutney by adding a little more water if needed.

Step 4

Taste the chutney and adjust the seasoning by adding more salt, lime juice, or sugar as per your preference.

Step 5

Transfer the chutney to a bowl or airtight container and chill it in the refrigerator for at least 30 minutes before serving.

Step 6
