Ingredients

  • 4 pieces (boneless, skinless) chicken breasts
  • 1 cup (fresh or canned, drained if canned) pineapple chunks
  • 1 cup (canned or fresh, drained if canned) mandarin orange segments
  • 2 tablespoons soy sauce
  • 3 tablespoons honey
  • 1 teaspoon (minced) ginger
  • 2 cloves (minced) garlic
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 2 tablespoons olive oil
  • 2 tablespoons (sliced, for garnish) green onions
  • 1 teaspoon (for garnish, optional) sesame seeds
  • 0.5 teaspoons (or to taste) salt
  • 0.25 teaspoons (or to taste) pepper

Directions

Step 1

Season the chicken breasts with salt and pepper on both sides.

Step 2

Heat a large skillet over medium heat and add the olive oil.

Step 3

Sear the chicken breasts for 4-5 minutes on each side, or until golden brown. Remove from the skillet and set aside.

Step 4

In the same skillet, reduce the heat to medium-low and add the minced garlic and ginger. Sauté for 1-2 minutes until fragrant.

Step 5

Add the pineapple chunks, mandarin orange segments, soy sauce, and honey to the skillet. Stir to combine and bring the mixture to a simmer.

Step 6

In a small bowl, whisk together the cornstarch and water to make a slurry. Pour the slurry into the skillet and stir well, allowing the sauce to thicken for 1-2 minutes.

Step 7

Return the seared chicken breasts to the skillet, spooning the sauce over the top. Cover the skillet and simmer for 10-12 minutes, or until the chicken is fully cooked through (internal temperature should reach 165°F).

Step 8

Once cooked, remove the skillet from heat. Garnish the chicken with sliced green onions and sesame seeds if desired.

Step 9

Serve the Pineapple Mandarin Chicken warm, either on its own or over steamed rice or noodles. Enjoy!
