Ingredients

  • 4 cups (diced) Fresh pineapple
  • 2 cups Granulated sugar
  • 2 tablespoons Lime juice
  • 1 teaspoon Lime zest
  • 1 cup Water
  • 1.75 ounces (1 pouch) Pectin

Directions

Step 1

Prepare the pineapple by peeling, coring, and dicing it into small chunks. Measure out 4 cups of diced pineapple.

Step 2

In a blender or food processor, pulse the diced pineapple until slightly chunky (or smooth, based on your texture preference).

Step 3

In a large saucepan, combine the pineapple, granulated sugar, lime juice, lime zest, and water. Stir to mix.

Step 4

Cook the mixture over medium heat, stirring frequently, until the sugar has dissolved and the mixture begins to simmer.

Step 5

Add the pectin to the saucepan, whisking continuously to incorporate it fully into the jam mixture.

Step 6

Increase the heat to bring the mixture to a full rolling boil (a boil that doesn't stop bubbling when stirred). Continue boiling for 1-2 minutes, stirring constantly.

Step 7

Remove the saucepan from the heat and skim off any foam that has formed on top using a spoon.

Step 8

Carefully ladle the hot jam into sterilized jars, leaving about 1/4 inch of headspace.

Step 9

Seal the jars with lids and process them in a boiling water bath for 10 minutes if preserving, or let them cool completely and store in the refrigerator for immediate use.

Step 10

Allow the jam to set for 24 hours before using. Serve as a spread, topping, or glaze to enjoy its tropical flavor.
