Ingredients

  • 1 cup Basmati rice
  • 2 cups Water
  • 1 cup Fresh pineapple chunks
  • 2 tablespoons Lemon juice
  • 1 teaspoon Lemon zest
  • 1 tablespoon Vegetable oil
  • 1 teaspoon Mustard seeds
  • 8 leaves Curry leaves
  • 2 small (chopped) Green chilies
  • 0.5 teaspoon Turmeric powder
  • 1 teaspoon Salt
  • 2 tablespoons Cashews
  • 2 tablespoons (chopped) Fresh cilantro

Directions

Step 1

Rinse the basmati rice under cold water until the water runs clear. Drain well.

Step 2

In a medium saucepan, combine the rice and water. Bring to a boil over high heat, then reduce the heat to low, cover, and simmer for 15 minutes or until the rice is tender and all the water is absorbed. Remove from heat and keep covered for 5 minutes, then fluff with a fork.

Step 3

While the rice is cooking, heat the vegetable oil in a large skillet over medium heat.

Add the mustard seeds and allow them to pop. Once they begin popping, add the curry leaves and chopped green chilies. Sauté for about 1 minute until fragrant.
