  • 1 cup Unsalted butter, softened
  • 1.5 cups Granulated sugar
  • 4 large Eggs
  • 2 teaspoons Vanilla extract
  • 1.5 cups Crushed pineapple in juice, drained (reserve juice)
  • 0.5 cup Buttermilk
  • 3 cups Powdered sugar
  • 8 ounces Cream cheese, softened
  • 0.5 cup Unsalted butter, softened (for frosting)
  • 1 teaspoon Vanilla extract (for frosting)
  • 0 N/A Fresh pineapple slices (optional, for garnish)

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.

Step 2

In a medium mixing bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

In a large mixing bowl, beat the butter and granulated sugar together with a hand mixer or stand mixer until light and fluffy, about 3-4 minutes.
