Ingredients

  • 1 can (20 oz, with juice reserved) Canned pineapple rings
  • 1 package (3 oz) Flavored gelatin (e.g., lime or strawberry)
  • 1 cup Boiling water
  • 0.5 cup Cold water
  • 1 as needed Non-stick cooking spray

Directions

Step 1

Open the can of pineapple rings and carefully drain the juice, reserving it in a measuring cup. Pat the pineapple rings dry with a paper towel and set them aside.

Step 2

Prepare gelatin by first dissolving the flavored gelatin powder in 1 cup of boiling water in a mixing bowl. Stir for 2 minutes until fully dissolved.

Step 3

Add 0.5 cups of the reserved pineapple juice (or cold water if there is not enough juice) to the gelatin mixture. Stir gently to combine and let it cool slightly to room temperature.

Step 4

Spray a muffin tin lightly with non-stick cooking spray to prevent the Jello from sticking.

Step 5

Place one pineapple ring in the bottom of each muffin cup. Carefully pour the cooled gelatin mixture over the pineapple rings until the rings are just covered.

Step 6

Transfer the muffin tin to the refrigerator and let it chill for at least 4 hours or until the gelatin is fully set.

Step 7

To remove the rings, gently run a small knife around the edges of each muffin cup, or briefly dip the bottom of the tin in warm water. Carefully lift each Pineapple Jello Ring out and transfer to a serving plate.

Step 8

Serve chilled and enjoy this tropical, jiggly treat!
