Ingredients

  • 1 lb Chicken breast, boneless and skinless
  • 1 cup Pineapple chunks, fresh or canned
  • 2 Bell peppers, assorted colors, sliced
  • 1 Hot pepper (such as red chili or serrano), finely chopped
  • 3 cloves Garlic, minced
  • 3 tbsp Soy sauce
  • 2 tbsp Honey
  • 2 tsp Cornstarch
  • 1 tbsp Water
  • 2 tbsp Vegetable oil
  • 2 Green onions, sliced for garnish
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 2 cups Cooked rice (optional, for serving)

Directions

Step 1

Slice the chicken breast into thin strips and season with salt and black pepper.

Step 2

In a small bowl, mix soy sauce, honey, and cornstarch with 1 tablespoon of water, then set aside.

Step 3

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

Step 4

Add the chicken strips to the skillet and stir fry until fully cooked and lightly browned, about 5-7 minutes. Remove the chicken from the skillet and set aside.

Add the remaining 1 tablespoon of vegetable oil to the same skillet. Add minced garlic and chopped hot pepper, stir-frying for about 30 seconds until fragrant.
