Ingredients

  • 4 pieces chicken thighs (bone-in, skin-on)
  • 1 cup pineapple juice
  • 3 tablespoons honey
  • 2 tablespoons soy sauce
  • 3 cloves garlic cloves (minced)
  • 2 teaspoons fresh ginger (grated)
  • 1 teaspoon cornstarch
  • 1 tablespoon water
  • 1 cup pineapple (diced, fresh or canned)
  • 2 jalapenos (seeded and finely diced)
  • 0.5 cup red onion (finely diced)
  • 0.25 cup cilantro (chopped)
  • 1 lime (juiced)
  • 1 tablespoon olive oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Preheat the oven to 400°F (200°C).

Pat the chicken thighs dry with paper towels and season them with salt and black pepper on both sides.

Heat the olive oil in a large oven-safe skillet over medium-high heat. Add the chicken thighs skin-side down and sear for 4-5 minutes until the skin is golden and crispy. Flip the chicken and cook for another 3 minutes. Remove the chicken and set aside.
