Ingredients

  • 1 whole (peeled, cored, and cut into wedges) Pineapple
  • 4 tablespoons Unsalted butter
  • 0.5 cup Brown sugar
  • 0.5 teaspoon Ground cinnamon
  • 1 teaspoon Vanilla extract
  • 0.25 cup Dark rum
  • 4 scoops (for serving) Vanilla ice cream

Directions

Step 1

Peel, core, and cut the pineapple into long wedges or thick slices. Set aside.

Step 2

In a large skillet, melt the unsalted butter over medium heat.

Step 3

Add the brown sugar and stir until it dissolves into the butter, forming a smooth caramel sauce.

Step 4

Sprinkle the ground cinnamon over the caramel sauce and stir to combine.

Step 5

Place the pineapple wedges into the skillet. Cook for 3-4 minutes on each side until caramelized and golden brown.

Step 6

Drizzle the vanilla extract over the caramelized pineapple and stir gently.

Step 7

Carefully add the dark rum into the skillet (stand back slightly, as it may ignite). Allow the alcohol to cook off for about 30 seconds, stirring lightly to coat the pineapple in the sauce.

Step 8

Remove the skillet from the heat.

Step 9

Serve the warm caramelized pineapple over scoops of vanilla ice cream, drizzling extra caramel sauce from the skillet on top.
