Ingredients

  • 4 pieces (6 ounces each) salmon fillets
  • 1 cup fresh pineapple chunks
  • 0.5 cup panko breadcrumbs
  • 0.25 cup (grated) Parmesan cheese
  • 2 tablespoons (melted) unsalted butter
  • 1 tablespoon honey
  • 2 cloves (minced) garlic
  • 1 tablespoon olive oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 tablespoon (chopped, for garnish) fresh parsley
  • 4 pieces (for serving) lemon wedges

Directions

Step 1

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.

Step 2

Place the salmon fillets, skin-side down, on the prepared baking sheet. Pat them dry with paper towels and season each fillet with salt and black pepper.

Step 3

In a food processor or blender, add the fresh pineapple chunks, panko breadcrumbs, grated Parmesan cheese, melted butter, honey, and minced garlic. Pulse until the mixture is combined and forms a slightly crumbly paste.

Step 4

Spoon the pineapple mixture evenly over the top of each salmon fillet, pressing gently to form a crust.

Step 5

Drizzle the olive oil over the crust on each fillet to help it brown while baking.

Step 6

Transfer the baking sheet to the preheated oven and bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork. The crust should be golden brown.

Step 7

Remove the salmon from the oven and let it rest for 2 minutes.

Step 8

Garnish each fillet with chopped fresh parsley and serve with lemon wedges on the side. Enjoy!
