Ingredients

  • 170 grams Unsalted butter, melted
  • 150 grams Granulated sugar
  • 1 teaspoon Vanilla extract
  • 300 grams All-purpose flour
  • 0.5 teaspoon Salt
  • 440 grams Canned crushed pineapple, drained
  • 3 tablespoons Cornstarch
  • 50 grams Brown sugar
  • 1 tablespoon Lemon juice
  • 80 grams Rolled oats

Directions

Step 1

Preheat your oven to 175°C (350°F). Line a 9x9-inch baking pan with parchment paper, leaving some overhang for easy removal later.

Step 2

In a medium mixing bowl, whisk together the melted butter, granulated sugar, and vanilla extract until smooth.

Step 3

Add the all-purpose flour and salt to the wet mixture. Use a spatula to combine until a crumbly dough forms.

Step 4

Reserve 1/3 of the dough for the crumble topping. Press the remaining 2/3 dough evenly into the bottom of the prepared baking pan to form the crust. Set aside.

Step 5

In a small saucepan over medium heat, combine the drained crushed pineapple, cornstarch, brown sugar, and lemon juice. Stir continuously for 3–5 minutes until the mixture thickens. Remove from heat and let cool slightly.
