Ingredients

  • 2 cups All-purpose flour
  • 0.75 cups Granulated sugar
  • 2 teaspoons Baking powder
  • 0.5 teaspoons Salt
  • 1 Egg
  • 0.75 cups Milk
  • 0.3 cups Vegetable oil
  • 1 teaspoons Vanilla extract
  • 1 cups Crushed pineapple (canned), drained
  • 0.5 cups Heavy cream
  • 1 tablespoons Confectioners' sugar
  • 0.25 cups Pineapple tidbits (optional, for topping)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or lightly grease the cups.

Step 2

In a large mixing bowl, combine the flour, sugar, baking powder, and salt. Whisk to combine evenly.

Step 3

In a separate bowl, whisk together the egg, milk, vegetable oil, and vanilla extract until well combined.

Step 4

Gradually stir the wet ingredients into the dry ingredients, mixing until just combined. Do not overmix—it's okay if the batter is slightly lumpy.

Step 5

Gently fold in the drained crushed pineapple until evenly distributed throughout the batter.

Step 6

Using a spoon or ice cream scoop, fill each muffin cup about 2/3 full with the batter.

Step 7

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 8

While the muffins are baking, whisk the heavy cream and confectioners' sugar together in a small bowl until slightly thickened. Keep refrigerated until ready to use.

Step 9

Once the muffins are done, remove them from the oven and let them cool in the pan for about 5 minutes, then transfer them to a wire rack to cool completely.

Step 10

Once the muffins have cooled, drizzle or spread the sweetened cream over the top of each muffin.

Step 11

If desired, garnish with pineapple tidbits for an extra burst of tropical flavor.

Step 12

Serve and enjoy!
