Ingredients

  • 400 grams pineapple (fresh or canned, diced)
  • 50 grams granulated sugar
  • 50 ml water
  • 15 ml lemon juice (freshly squeezed)
  • 5 ml vanilla extract
  • 1 pinch ground cinnamon (optional)

Directions

Step 1

Peel and core the pineapple if using fresh, then dice it into small pieces. If using canned pineapple, drain the juice and dice into smaller chunks as needed.

Step 2

In a medium saucepan, combine the diced pineapple, granulated sugar, and water.

Step 3

Cook over medium heat, stirring occasionally, until the sugar has dissolved and the mixture begins to simmer, about 3-5 minutes.

Step 4

Reduce the heat to low and simmer gently for 10-12 minutes, stirring occasionally to prevent sticking. The pineapple should soften, and the liquid will thicken slightly.

Step 5

Stir in the lemon juice, vanilla extract, and ground cinnamon (if using). Cook for an additional 1-2 minutes to combine the flavors.

Step 6

Remove the saucepan from heat and allow the compote to cool slightly. The mixture will continue to thicken as it cools.

Step 7

Serve warm, at room temperature, or chilled. Store leftovers in an airtight container in the refrigerator for up to one week.
