Ingredients

  • 1.5 cups jasmine rice
  • 1 cup coconut milk
  • 0.5 cup water
  • 1 cup pineapple chunks (fresh or canned, drained)
  • 1 tablespoon sugar
  • 0.5 teaspoon salt
  • 2 tablespoons unsweetened shredded coconut (optional for garnish)
  • 2 tablespoons fresh cilantro (optional for garnish)

Directions

Step 1

Rinse the jasmine rice thoroughly under cold water until the water runs clear. This helps remove excess starch for fluffier rice.

Step 2

In a medium saucepan, combine the rinsed jasmine rice, coconut milk, water, sugar, and salt. Stir everything together to ensure the rice is evenly coated.

Step 3

Place the saucepan over medium heat and bring the mixture to a gentle boil. Once it starts boiling, reduce the heat to low, cover the pot with a tight-fitting lid, and simmer for 15 minutes.

Step 4

After 15 minutes, turn off the heat but keep the lid on. Let the rice sit and steam for an additional 5 minutes to finish cooking.

Step 5

While the rice is resting, heat a small nonstick skillet over medium heat. If you’re using shredded coconut, lightly toast it for 2–3 minutes until golden brown. Set it aside for garnish.

Step 6

Once the rice is fully steamed, gently fluff it with a fork and fold in the pineapple chunks. Be careful not to overmix as the rice might become mushy.

Step 7

Transfer the pineapple coconut rice to a serving dish. Garnish with toasted shredded coconut and freshly chopped cilantro, if desired.

Step 8

Serve warm as a side dish with grilled chicken, seafood, or your favorite tropical-inspired entrée.
