Ingredients

  • 2 cups (finely diced) fresh pineapple
  • 0.5 cups (toasted) unsweetened shredded coconut
  • 0.5 cups (finely diced) red bell pepper
  • 1 (seeded and finely minced) jalapeño pepper
  • 0.25 cups (chopped) fresh cilantro
  • 0.25 cups (finely diced) red onion
  • 2 tablespoons fresh lime juice
  • 1 tablespoon honey (or maple syrup for vegan option)
  • 0.25 teaspoons salt
  • 0.25 teaspoons black pepper

Directions

Step 1

Finely dice the fresh pineapple to measure 2 cups and place it in a large mixing bowl.

Step 2

Toast the shredded coconut by placing it in a dry skillet over medium heat. Stir frequently until it is golden brown and aromatic, about 3-5 minutes. Remove from heat and let it cool.

Step 3

Finely dice the red bell pepper, seed and mince the jalapeño pepper, and finely dice the red onion. Add all of these to the bowl with the pineapple.

Step 4

Chop the fresh cilantro and add it to the bowl.

Step 5

In a small bowl, whisk together the fresh lime juice, honey (or maple syrup for a vegan option), salt, and black pepper.

Step 6

Pour the lime juice mixture over the pineapple mixture and toss gently to combine.

Step 7

Once the toasted coconut has cooled, gently fold it into the relish to preserve its crisp texture.

Step 8

Taste and adjust the seasoning with additional salt, lime juice, or honey if desired.

Step 9

Cover and refrigerate the relish for at least 15 minutes before serving to allow the flavors to meld together.

Step 10

Serve chilled or at room temperature as a topping for grilled fish, chicken, tacos, or as a vibrant side dish.
