  • 1 Large egg
  • 1 teaspoon Vanilla extract
  • 0.75 cup Crushed pineapple, drained
  • 0.75 cup Shredded carrots
  • 0.5 cup Chopped walnuts (optional)
  • 0.25 cup Powdered sugar (optional, for dusting)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper or non-stick silicone mats.

In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, cinnamon, and salt. Set aside.

In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy, about 2-3 minutes.
