  • 4 medium-sized beets
  • 1 cup pineapple chunks
  • 2 tablespoons olive oil

Directions

Step 1

Preheat the oven to 400°F (200°C).

Wash and trim the beets, removing the stems and roots. Wrap each beet individually in aluminum foil and place them on a baking sheet.

Roast the wrapped beets in the preheated oven for 40-45 minutes, or until they are tender. To check doneness, insert a skewer or knife into the beets; it should glide in easily.
