  • 1.5 cups pineapple juice
  • 1 cup brown sugar
  • 0.5 cup honey
  • 2 tablespoons Dijon mustard
  • 2 sprigs fresh rosemary sprigs
  • 0.25 teaspoon ground cloves
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 15 cloves whole cloves
  • 6 slices pineapple rings (optional, for garnish)
  • 6 pieces cherries (optional, for garnish)

Directions

Step 1

Preheat your oven to 325°F (165°C). Position the oven rack in the lower third of the oven.

Step 2

Place the ham flat-side down in a large roasting pan. Score the surface of the ham in a diamond pattern using a sharp knife. Insert a whole clove into the center of each diamond crosshatch.

Step 3

In a medium saucepan over medium heat, combine the pineapple juice, brown sugar, honey, Dijon mustard, rosemary sprigs, ground cloves, salt, and black pepper. Increase the oven temperature to 400°F (200°C) and bake the ham uncovered for the final 30 minutes, allowing the glaze to caramelize beautifully. Keep a close eye to ensure the glaze doesn’t burn.

Remove the ham from the oven and let it rest for 15 minutes before carving. Slice and serve warm.
