Ingredients

  • 16 oz Cream cheese
  • 8 oz Crushed pineapple
  • 0.25 cup Green bell pepper, finely diced
  • 0.25 cup Green onions, finely chopped
  • 2 tbsp Powdered sugar
  • 0.5 tsp Salt
  • 1.5 cups Chopped pecans
  • 0 Crackers or vegetables for serving

Directions

Step 1

In a large mixing bowl, combine the softened cream cheese and powdered sugar. Mix until smooth and fully incorporated.

Step 2

Drain the crushed pineapple thoroughly to remove excess juice, then add it to the cream cheese mixture along with the diced green bell pepper, chopped green onions, and salt. Mix well until all ingredients are fully combined.

Step 3

On a clean surface, lay out a large sheet of plastic wrap. Transfer the cheese mixture to the center of the plastic wrap and use the wrap to shape it into a ball. Once shaped, wrap it tightly and refrigerate for at least 2 hours to firm up.

Step 4

Place the chopped pecans in a shallow dish or plate. Remove the cheese ball from the plastic wrap and gently roll it in the pecans until it is evenly coated on all sides.

Step 5

Transfer the cheese ball to a serving plate and serve with crackers or fresh vegetable sticks. Enjoy!
