Ingredients

  • 4 pieces Tilapia fillets
  • 0.5 cups Pine nuts
  • 0.25 cups Panko breadcrumbs
  • 0.25 cups Grated Parmesan cheese
  • 1 teaspoon Lemon zest
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 1 large Egg
  • 0.25 cups All-purpose flour
  • 2 tablespoons Olive oil
  • 1 for serving Lemon wedges

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.

Step 2

In a food processor, pulse the pine nuts until they are finely chopped but not powdery. Transfer them to a shallow dish.

Step 3

Mix the chopped pine nuts with the panko breadcrumbs, grated Parmesan cheese, lemon zest, salt, and black pepper in the shallow dish.

Step 4

In another shallow dish, lightly beat the egg. In a third shallow dish, place the all-purpose flour.

Step 5

Pat the tilapia fillets dry with a paper towel. Dredge each fillet in the flour, shaking off the excess. Dip into the beaten egg, allowing any excess egg to drip off, and then press the fillet into the pine nut mixture, coating both sides evenly.

Step 6

Heat the olive oil in a large, oven-safe skillet over medium heat. Once the oil is hot, add the crusted fillets to the skillet. Sear them for 2-3 minutes on each side, until the crust is golden brown.

Step 7

Transfer the skillet to the preheated oven and bake for 5-7 minutes, or until the fish is cooked through and flakes easily with a fork.

Step 8

Remove the tilapia from the oven and let it rest for a minute. Serve with lemon wedges on the side for an extra burst of freshness.
