Ingredients

  • 1 cup Pineapple chunks
  • 2 tablespoons Light brown sugar
  • 1 cup Unsweetened coconut flakes
  • 4 scoops Vanilla ice cream
  • 2 tablespoons Coconut cream
  • 1 teaspoon Dark rum (optional)
  • 1 cup Whipped cream
  • 4 pieces Maraschino cherries
  • 4 leaves Mint leaves (optional, for garnish)

Directions

Step 1

Preheat a non-stick skillet over medium heat.

Add the pineapple chunks and sprinkle the light brown sugar over them. Cook for 3-5 minutes, stirring occasionally, until the pineapple is caramelized and golden. Remove from heat and let cool slightly.
