  • 2 cups Pineapple chunks (fresh or canned)
  • 1 cup Coconut milk (full-fat)
  • 0.25 cup Shredded sweetened coconut
  • 3 tablespoons Honey or agave syrup
  • 0.5 teaspoons Vanilla extract
  • 1 tablespoon Optional: Dark rum for adults (omit for kid-friendly version)

Directions

Step 1

1. If you are using fresh pineapple, peel, core, and cut it into bite-sized chunks. If using canned pineapple, drain it thoroughly.

2. In a high-powered blender, combine the pineapple chunks, coconut milk, shredded coconut, honey or agave syrup, and vanilla extract. If using rum, add it at this stage.

3. Blend the mixture on high until smooth and creamy. Pause to scrape down the sides of the blender to ensure everything is fully incorporated.

4. Taste the mixture and adjust the sweetness if needed by adding more honey or agave syrup.

5. Pour the mixture evenly into popsicle molds, leaving a small gap at the top to allow for expansion as they freeze.
