  • 170 grams unsalted butter
  • 150 grams granulated sugar
  • 50 grams brown sugar
  • 300 grams all-purpose flour
  • 1 teaspoon salt
  • 200 grams canned crushed pineapple (drained well)
  • 100 grams shredded sweetened coconut
  • 120 grams cream cheese
  • 1 egg yolk
  • 1 teaspoon vanilla extract
  • 1 tablespoon cornstarch

Directions

Step 1

Preheat your oven to 180°C (350°F) and line a 9x9 inch (23x23 cm) baking pan with parchment paper, leaving overhang on the sides for easy removal.

Step 2

In a large bowl, mix the butter (softened), granulated sugar, and brown sugar together until creamy. Add the all-purpose flour and salt, then mix until crumbly.

Step 3

Set aside 1 cup of the crumb mixture for the topping. Press the remaining mixture firmly into the bottom of the prepared baking pan to form the crust.
