Ingredients

  • 200 grams strawberries
  • 150 milliliters Pimm's No. 1
  • 300 milliliters lemonade
  • 3 pieces gelatin leaves
  • 50 grams cucumber (thinly sliced)
  • 6 pieces fresh mint leaves
  • 0.5 pieces orange (thinly sliced)
  • 20 grams sugar (optional)

Directions

Step 1

Wash the strawberries thoroughly and hull them. Slice them into halves if they are large.

Step 2

Set aside a few slices of strawberries, cucumber, and orange along with some fresh mint leaves for garnish.

Step 3

Place the gelatin leaves in a bowl of cold water and let them soak for 5-10 minutes until softened.

Step 4

In a small saucepan, gently heat 100 milliliters of the lemonade over low heat until warm but not boiling.

Step 5

Squeeze any excess water from the softened gelatin leaves and add them to the warm lemonade. Stir until completely dissolved, then remove the pan from the heat.

Step 6

In a large mixing bowl, combine the Pimm's No. 1, remaining lemonade, and the dissolved gelatin mixture. If you prefer a sweeter dessert, stir in the optional sugar until fully dissolved.

Step 7

Place a few slices of strawberries, cucumber, orange, and mint leaves into individual serving glasses or ramekins.

Step 8

Pour the Pimm’s mixture evenly into the prepared glasses, ensuring the fruit and mint are evenly distributed.

Step 9

Chill the glasses in the refrigerator for at least 4-6 hours, or until the jellies are fully set.

Step 10

Once set, garnish the top of each jelly with the reserved slices of strawberries, cucumber, orange, and mint leaves for a beautiful presentation. Serve cold and enjoy!
