Ingredients

  • 8 pieces Red chili peppers (Bird's Eye or similar)
  • 4 pieces Garlic cloves
  • 1 tablespoon Fresh ginger
  • 1 teaspoon Paprika (smoked or sweet)
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 2 tablespoons Lemon juice
  • 2 tablespoons White vinegar
  • 3 tablespoons Olive oil
  • 1 teaspoon Salt
  • 2 tablespoons Fresh cilantro (optional)
  • 1 teaspoon Honey (optional, for sweetness)

Directions

Step 1

Wash and remove stems from the red chili peppers. If you prefer a milder heat, you can deseed some or all of the peppers.

Step 2

Peel the garlic cloves and fresh ginger.

Step 3

In a blender or food processor, combine the chili peppers, garlic, and ginger.

Step 4

Add the paprika, ground cumin, ground coriander, lemon juice, white vinegar, olive oil, and salt to the blender.

Step 5

If desired, add fresh cilantro and honey for additional flavor complexity.

Step 6

Blend everything together until smooth. You may add a small amount of water (1-2 teaspoons) if the mixture is too thick to blend.

Step 7

Taste and adjust seasoning as needed, adding more salt, lemon juice, or honey to balance flavors.

Step 8

Pour the marinade into a clean glass jar or airtight container. Store in the refrigerator for up to 2 weeks.

Step 9

Use the marinade to coat chicken, shrimp, beef, vegetables, or tofu before grilling, baking, or pan-frying. For best results, marinate for at least 2 hours or overnight.
