Ingredients

  • 1 cup wild rice
  • 3 cups water
  • 1 cup vegetable broth
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 2 medium leeks (white and light green parts only, sliced into thin rounds)
  • 2 cloves garlic, minced
  • 8 ounces cremini or button mushrooms, sliced
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley (for garnish)

Directions

Step 1

Rinse the wild rice thoroughly under cold running water and drain well.

Step 2

In a medium saucepan, combine the wild rice, water, and vegetable broth. Bring to a boil over high heat.

Step 3

Once boiling, reduce the heat to low, cover, and simmer for 40-45 minutes, or until the rice is tender and some grains have burst. Drain any excess liquid and set the rice aside.

Step 4

While the rice cooks, heat the olive oil and butter in a large skillet over medium heat.

Step 5

Add the sliced leeks to the skillet and sauté for 4-5 minutes, or until they are softened but not browned.

Step 6

Stir in the minced garlic and cook for an additional 30 seconds, until fragrant.

Step 7

Add the sliced mushrooms to the skillet and cook, stirring frequently, for 6-8 minutes, or until the mushrooms have released their moisture and are golden brown.

Step 8

Sprinkle the thyme, salt, and black pepper over the mushroom mixture and stir to combine.

Step 9

Add the cooked wild rice to the skillet and gently fold it into the mushroom and leek mixture until everything is well combined and heated through, about 2-3 minutes.

Step 10

Taste and adjust seasoning with additional salt and pepper, if needed.

Step 11

Transfer the pilaf to a serving dish and garnish with chopped fresh parsley before serving.
