Ingredients

  • 150 g All-purpose flour
  • 2 tsp Baking powder
  • 2 tbsp Caster sugar
  • 0.25 tsp Salt
  • 1 large Egg
  • 180 ml Milk
  • 1 tbsp Unsalted butter (melted and slightly cooled)
  • 1 tbsp Butter or oil (for greasing the pan)

Directions

Step 1

In a medium-sized mixing bowl, sift together the flour, baking powder, caster sugar, and salt.

Step 2

In a separate bowl, lightly whisk the egg, then add the milk and melted butter. Mix until well combined.

Step 3

Make a well in the center of the dry ingredients and pour in the wet mixture. Gently whisk until the batter is smooth and free of lumps. Be careful not to overmix.

Step 4

Heat a non-stick frying pan or griddle over medium heat. Lightly grease the surface with a small amount of butter or oil.

Step 5

Using a tablespoon or small ladle, drop spoonfuls of batter onto the pan, spacing them out to allow for spreading. Each pikelet should be around 6–7 cm in diameter.
